Marinated Spinach

4 cups of fresh spinach
2 TBSP Sunny’s Stir Fry Oil
1 tsp toasted sesame seeds
1 green onion, chopped
1 tsp of sea salt, optional
Fresh cracked pepper to taste


Step 1
In a large pot, bring approximately 8 cups of salted water to a high boil.
Step 2
While you wait for the boil, prepare an ice bath for the spinach.
Step 3
Leave at high boil for about a minute, then turn heat off and add spinach quickly and stir until completely submerged for about 1 minute and then remove and drain in colander and then immediately place spinach in the ice bath.
Step 4
After about 2 minutes, drain in colander and gently squeeze out any water.
Step 5
Place spinach in a medium mixing bowl and add remaining ingredients.
Step 6
Mix gently until well coated.
Step 7
Let sit in the fridge for 1 hour before serving.
